Jaw crushers, actually all crushers, are sized by the volume of material that can pass through the crusher nominally at the closed side setting (the minimum opening).  This also depends on the top size of the feed.  For more precise calculation you look at the dimension of the crusher at the closed side setting (as a volume)  then multiply this by the unit of time (usually hours) then consider the density of the material to get a weight per time.  Note this will be an optimistic number because some feed will be smaller than the setting and some much larger.  Also some materail will pass during the time at the open side setting.

The best thing is to contact the jaw crusher manufacturers with the information on the application.  Try Metso and FL Smidth.
