can ammonia be used as an alternative to remove copper from gold loaded carbon instead of cold cyanide wash

Maybe but if you mix the chemcials you are going to have a hard time keeping them separate.  Acid washing prior to elution is the most common method.  Cold cyanide may cause the loss of some gold.
